Ascorbic acid is the enolic form of 3-oxo-L- gulofuranolac-tone. It can be prepared by synthesis from glucose, or extracted from plant sources such as rose hips, blackcurrants or citrus fruits. It is easily oxidized in air. It is a white or slightly yellow crystals or powder,a little acid.m.p.190°C-192°C,easily soluble in water,a little soluble in alcohol and uneasily soluble in Ether and chlorofom and other organic solvent.In solid state it is stable in air.Its water solution is easliy mutated when it meets with air.

a. Ascorbic acid (vitamin C) is used to prevent or treat low levels of vitamin C in people who do not get enough of the vitamin from their diets
b. Ascorbic acid and its sodium, potassium, and calcium salts are commonly used as antioxidant food additives.
c. Ascorbic acid is easily oxidized and so is used as a reductant in photographic developer solutions (among others) and as a preservative.
